MJUIC Insights: We are pleased to share the recent contribution of Dr. Kanjana Sommit, a lecturer at Maejo University International College, who was invited as a guest speaker and panelist at the "Adding Small Beans to School Trays" forum.
Held on March 8, 2026, as part of the Good Seeds Good Food Festival, the event brought together academics, botanists, developers, and educators to discuss how a single school meal can spark a massive shift in our food system.
The discussion focused on a powerful idea: systemic change can start with something as small as a single school meal. The panel collectively shared several key insights and takeaways:
Harnessing Local Biodiversity: Thailand is home to nearly 700 species of beans, with 50 varieties easily available. These are "superfoods" that are easy to grow, sustainable, and provide essential protein for growing children.
Schools as the Cradle of Eating Habits: Research shows that childhood is the most critical period for developing lifelong dietary patterns. By introducing vegetables, beans, and local crops in school, we foster healthy habits that stay with children into adulthood.
Integrating Nutrition with Education: The "Farm-to-School" concept turns the lunch tray into a classroom. By sourcing fresh, non-processed food from local farmers, children learn about nutrition and local food wisdom simultaneously.
The Flexitarian Transition: While changing national procurement systems takes time, the group agreed that we can start now. Adjusting menus to include plant-based proteins (the Flexitarian approach) is a practical first step that ripples from schools to families.
The forum concluded that school lunches are a vital link between child nutrition, local agriculture, and social food security.
"Food system transformation doesn't always start with grand policies; it often begins with a tiny bean on a child's lunch tray."

The International College, Maejo University, organized a Memorandum of Understanding (MOU) Signing Ceremony in collaboration with ECHO Asia Impact Center to strengthen international cooperation in academics, research, and sustainable development.On May 28, 2026, at LC 5, International College, Maejo University, the International College officially held the MOU Signing Ceremony with ECHO Asia Impact Center. The event was attended by university administrators, faculty members, staff, and representatives from both organizations.On this occasion, Assoc. Prof. Dr. Rapeephun Dangtungee, Dean of the International College, Maejo University, delivered the welcome remarks and highlighted the importance of academic collaboration and international networking in supporting sustainable educational and social development.In addition, Mr. Patrick Trail shared the vision and future collaborative directions between the two organizations. Dr. Prakash Murgeppa Bhuyar also delivered a presentation on sustainable development approaches and future opportunities for knowledge exchange and joint activities.The signing ceremony marked another significant milestone in strengthening the partnership between the two institutions while promoting academic cooperation, research collaboration, capacity building, and international community engagement for a more sustainable future.
